Black Bean Salad
This salad is a wonderful side dish on a hot summer day.
1 can black beans (drained and rinsed)
1/2 bunch of chives / green onions (chopped)
2 plum tomatoes (chopped)
salt and pepper to taste
olive oil (I just drizzle a little over the top)
combine all of the ingredients, mix, and chill for at least 20 minutes.
